CEVICHE PERUANO

INGREDIENTS
- Fish or seafood, chopped or diced into 1/2-inch pieces – 1 1/2 pounds
- Lime juice – 3/4 cup
- Red hot pepper in brine- Yape! Gourmet – 1
- Limo hot pepper in brine- Yape! Gourmet -1
- Garlic paste – Yape! Gourmet – 2 to 3 scoops
- Cilantro – finely chopped
- Red onion, thinly sliced- 1
- Salt and pepper – to taste
- Sweet potato boiled thick slices – 2 oz
- Chulpi corn- Yape! Gourmet
- Fresh boiled corn
DIRECTIONS
- Put the fish in a glass bowl with 1 tablespoon of salt and garlic paste – Yape! Gourmet, cover and refrigerate while you boil the sweet potato, corn, and prepare the onions, hot peppers, cilantro, and juice the limes.
- Rub the thin onion slices with 1/2 tablespoon of salt and rinse in cold water.
- Add to bowl with fish, half of the sliced onions, and hot peppers, and pour the lime juice. Sprinkle salt and pepper.
- Cover and refrigerate for about 5-15 minutes.
- Finally add the finely chopped cilantro. Taste the fish ceviche and add additional salt if needed.
- Serve immediately with your choice of sides.
