PERUVIAN DUCK WITH RICE

INGREDIENTS
- Duck, cut into serving pieces – 2 to 3 pounds
- Oil – 1/4 cup
- Onion, finely chopped – 1
- Red bell pepper, finely chopped – 1
- Garlic paste – Yape! Gourmet – 2 or 3 spoons
- Cilantro, chopped – 1 bunch
- Water 2 cups
- Beer, preferably dark – 2 cups
- Salt and pepper – to taste
- Rice – 2 cups
DIRECTIONS
- Prick the skin of the duck all over with a small knife. Heat the oil in a large pot, and brown the duck on all sides. Remove the duck to a plate and set aside.
- Pour off all but 2 or 3 tablespoons of oil and saute the onion and bell pepper until the onion is translucent, 4 to 5 minutes. Add the garlic paste – Yape! Gourmet and stir for another 1 or 2 minutes.
- Add the cilantro and 1 cup of the water to a blender, blend it. Return the duck pieces to the pot and add the cilantro puree and the remaining 1 cup of water along with the beer, salt and pepper. Boil until the duck is cooked.
- Add the rice in the pot, stir and return to a simmer. Cover and cook until the rice is fully cooked.
- Remove from heat and set aside to rest for 5 minutes. Fluff the rice with a fork and serve.
